TGI Fridays Potato Skins

Normal Baked Potatoes with Sour Cream I find lazy. Fully loaded with some toppings they already taste better to me and even more with tuna or lox. But then it's a complete meal! If I want to serve baked potatoes more as a side dish, then I usually have the potato skins modeled on TGI Friday. These are pre-cooked "potato shells" (something from the inside is scratched out), which are baked again with bacon and cheese.  This last preparation step can also be done on the grill, see photo below.

I often omit the bacon (because I want to reduce the meat consumption a bit), but I crush the scraped inside with a little milk to a kind of KaPĆ¼ and put it back into the potato "shells". So I don't have to throw anything away. By the way, the potato skins can also be served as a snack, because they can be eaten a little cooled out of the hand.


1 tbsp oil
4 medium potatoes
125 g sour cream
1 tbsp chives, in rolls
8 slices breakfast bacon, crispy fried, crumbled
100 g grated cheese (Cheddar, Pikantje or similar)
50 g butter, melted


  1. Oil the potatoes with a peel, bake in the oven at 200 degrees for about an hour, let them cool slightly.
  2. Meanwhile, for the dip, mix sour cream with chives and a little salt, set to the cold.
  3. Cut through the potatoes and hollow out a little, sprinkle with butter inside and outside. Place potatoes with the cutting surface on top of a baking tray and brown under the hot oven grill, then sprinkle with cheese and bacon, and continue grilling until the cheese melts.
  4. Serve with Sour Cream Dip.


If you (like me) don't want to throw away the inside: Crush it with a little milk into a kind of mash, season it and return it to the potato halves. Then bacon and cheese on top
